This looks like a great cookbook that was on a family member's wish list, and when I saw it was available in spiral for flat viewing while baking, I got this one! She was very happy with the book. The original dates-of-arrival range included before Christmas. You did great . . . it was UPS that bungled. I was very disappointed with UPS (and not the first time). You prepared it for shipment immediately but UPS took its own sweet time, even prolonging expected date of arrival from the original estimate. When it sat and sat at UPS without any movement or updates, I was not pleased. Finally it gave a date for delivery of December 29 but it didn't even make that. It didn't arrive until 9:01 p.m. on Friday, December 30, 2022, after it had been transferred to USPS. USPS did the best they could by the time it got to them. I've canned before, but it's been a long time. Because of how long it has been since I have canned, I wanted a book that would be good for a beginner. I didn't want to rely on my memory for anything. This book is different from many other canning books that I have seen, in that it covers more than just recipes, it also goes in-depth regarding (what I think of as) simple canning. The first part of the book tells you what kind of equipment you will need, and why. It also makes it very clear how to prepare your jars (sterilizing) and how to deal with old canned goods that may have lost their seal. The book also includes a rather comprehensive (for North American groceries and farmer's markets, at least)listing of different fruits and vegetables, and how they are best canned. The book also talks about pickling, brining, and freezing. The only thing I don't like about the book is that it doesn't talk much about alternative ingredients, such as using less sugar, or substituting honey. The pictures are beautiful and full color! I've canned before, but it's been a long time. Because of how long it has been since I have canned, I wanted a book that would be good for a beginner. I didn't want to rely on my memory for anything. This book is different from many other canning books that I have seen, in that it covers more than just recipes, it also goes in-depth regarding (what I think of as) simple canning. The first part of the book tells you what kind of equipment you will need, and why. It also makes it very clear how to prepare your jars (sterilizing) and how to deal with old canned goods that may have lost their seal. The book also includes a rather comprehensive (for North American groceries and farmer's markets, at least)listing of different fruits and vegetables, and how they are best canned. The book also talks about pickling, brining, and freezing. The only thing I don't like about the book is that it doesn't talk much about alternative ingredients, such as using less sugar, or substituting honey. The pictures are beautiful and full color! love this book! this is a great book to have if your canning. has new and old recipes, simple and some more complex. I love that it has substitutes in case you don't have that certain ingredient. it also has tips on the side of each recipe which is awesome. its a paperback book but the outer casing is a thicker water proof like paper. which can in handy when I accidently spilt pop on the counter .nikki
I bought this book to open up my options with water bathing and pressure canning. It has lots of different recipes but I wish there were more complete meals for pressure canning. There's some really useful info included, I.e. in the back it converts produce purchased to yield once prepared (500g carrots converts to 3 cups sliced). Overall it's a very good all rounder to have.New to canning

Great Book and a must have if your not familiar with such task. Also includes some recipe's and the recipe for Pemmican. If your not familiar with the history of Pemmican research it. It's made to provide the essential nutrition for survival and at one time in history was considered a commodity for trade because it has a long shelf life when stored correctly. There are some nice recipes for the canned goods and the photos are great. About half the book is cooking recipes for using the canned goods which I wasn’t really looking for. My biggest problem is that all of the recipes requiring pectin uses a specialized type called Pomona’s pectin. Not something I have on hand or use and significantly more expensive than the others. And the book says there is no way to adapt to use the traditional brands.Ringlec
